Extra Dry Protected Designation of Origin sparkling wine.

Production Area

The vineyards are located in the province of Treviso within the Prosecco DOC area. From the hills of morainic origin, the production area expands onto the plain with medium-textured alluvial soils.

Vinification

The whole grapes are introduced into the pneumatic press and the must obtained from their soft pressing, after an initial racking, is placed in temperature-controlled tanks where it remains until it is used for the production of the sparkling wine.

Production

The must, added with yeasts selected by Casa Gheller, is placed in temperature-controlled tanks where fermentation takes place at a controlled temperature of 15-16°C; in this way, all the aromas of the harvest are enhanced. Once the desired alcohol content and sugar content has been reached, fermentation is stopped by refrigeration and after a short period of rest, the sparkling wine is ready for bottling.

Pairings

It is an excellent aperitif accompanied by savoury snacks. Ideal with marinated fish and herb-based first courses. Serving temperature 6-8°C.
