Description

It has a pale straw yellow colour, fine and persistent perlage; the bouquet is intensely fruity with clear notes of ripe golden apples. Pleasant and elegant is the floral note reminiscent of acacia flowers. The taste is fresh, slightly sweet, soft on a savoury background with a pleasantly fruity and harmonious finish.

Production area

D.O.C.G. zone between the towns of Conegliano and Valdobbiadene, this is a hilly area of morainic origin with calcareous soils mixed with marl and in some cases also limestone-clay.

Vinification

The whole grapes are introduced into the pneumatic press and the must obtained from their soft pressing, after an initial racking, is placed in temperature-controlled tanks where it remains until it is used for the production of the sparkling wine.

Production

The must, added with yeasts selected by Casa Gheller, is placed in temperature-controlled tanks where fermentation takes place at a controlled temperature of 15-16°C; in this way, all the aromas of the harvest are enhanced. Once the desired alcohol content and sugar content has been reached, the fermentation is stopped by refrigeration and after a short resting period the sparkling wine is ready for bottling.

Pairings

It is an excellent aperitif. It can accompany marinated fish with delicate herbs and first courses with wild herbs. Serving temperature 6-8°C.
