Description

It has a pale straw yellow colour, fine and persistent perlage; the bouquet is intensely fruity with clear notes of golden apples, exotic fruit salad and citrus fruits; persistent floral notes reminiscent of acacia flowers. The taste is fresh, delicately sweet; it develops a subtle mousse in the mouth that releases soft fruity sensations.

Production area

Small D.O.C.G. hilly area of about 106 hectares of vineyards between the hamlets of Santo Stefano and S. Pietro di Barbozza in the municipality of Valdobbiadene. A true cru that is the result of a perfect combination of a mild microclimate and ancient soil with moraines, sandstones and clays.

Vinification

The whole grapes are introduced into the pneumatic press and the must obtained from their soft pressing, after an initial racking, is placed in temperature-controlled tanks, where it remains until it is used to make the sparkling wine.

Production

The must, added with yeasts selected by Casa Gheller, is placed in temperature-controlled tanks where fermentation takes place at a controlled temperature of 15-16°C. This enhances all the aromas of the harvest. Once the desired alcohol content and sugar content has been reached, the fermentation is stopped by refrigeration and, after a short resting period, the sparkling wine is ready for bottling.

Pairings

It is a supple sparkling wine that can open and close a pleasant evening at the table with equal ease. Ideal with marinated rockfish or salmon tartare. It can accompany moderately sweet leavened desserts. Serving temperature 6-8°C.
