Description

It has a brilliant straw-yellow colour with a presistently fine perlage; white, exuberant mousse. On the palate, ripe white fruit is revealed with well-pronounced accents, lending harmony and sweetness to the nose. It has fragrant and floral hints, with delicate notes of leavened bread dough and small mountain flowers. It has a fresh, dry flavour on a soft background. It has an upright backbone with a savoury and persistent finish; the acidity, in perfect harmony, contributes to its great personality and character.

Production Area

The ‘Serenissima’ DOC area extends in the piedmont area located in an arc between the Alps to the north and the Po Valley to the south. The soils, depending on the hillside areas, are of volcanic or sedimentary origin; the soils resulting from the crumbling of these rocks are on average superficial, with a widespread presence of skeleton that allows excellent drainage of rainwater. The vineyards are located on our Crocetta del Montello estate. Summers are cool and breezy and characterised by marked day-night temperature swings.

Grape variety

Chardonnay and Pinot Noir; percentages that may vary slightly depending on the vintage.

Vinification

The whole grapes are put into the pneumatic press and the must obtained from their soft pressing, after an initial racking, is placed in temperature-controlled tanks, where alcoholic fermentation takes place at a temperature of 17-19°C. The wine then remains to mature until the following spring.

Production

After forming the cuvée by blending the two different types of wine and dosing the yeasts selected by Villa Sandi, bottling takes place. The bottles are then placed in stacks in underground galleries at a constant temperature and humidity. This is where fermentation takes place for frothing and the sparkling wine matures on its lees for at least 24 months. After this period, the wine is disgorged and only after two months of rest is the sparkling wine ready to be placed on the market.

An excellent aperitif, ideal with finger food. Serving temperature 6-8°C.
